This is quite literally, the best chia seeding pudding recipe I’ve tried! You can get creative and add variations such as chocolate, almond butter or blended fruits but don’t change the base recipe. it’s the best!
Chia seed pudding is great for nearly any diet – keto, paleo, primal, clean eating, gluten-free, vegan, etc. It’s also great any time of the day – breakfast, dessert, snack time, etc. It’s loaded with fiber, healthy fats and protein as well. It’s also VERY filling.
My favorite milk to use with this is Califia Farms Toasted Coconut Almond Milk (btw, this is THE best coffee creamer, ever!) because it’s delicious and carrageenan free, which is hard to find with almond and coconut milks.
If you want to change up the flavors, I highly recommend using SweetLeaf English Toffee Stevia Drops. It is delicious. It’s also great for making delicious iced coffee.

Best Chia Seed Pudding
- Pour milk in a small bowl, add remaining ingredients, stir and chill
- Chill for 30 min, stir again then chill for another 20-30 minutes.
Variations - add 2-4 tbsp cocoa powder and maybe another tsp or two of stevia for chocolate, top with your favorite fruit, add different flavor extracts (lemon, banana, mint). You can also blend for a smoother texture.
